Vegetables get ignored when they are steamed into silence and pushed to the side. A generous dinner treats them as the main event and then adds a protein and a grain so nobody leaves the table hunting for bread in secret.

Start with heat. Roast carrots, cabbage, broccoli, and peppers until the edges darken. Browning is flavor. Then add acid: lemon, vinegar, or pickled onion. Acid is what makes a tray of vegetables taste finished instead of plain.

Build the plate in thirds if you like a visual rule. One third plants, one third protein such as lentils, eggs, fish, tofu, or chicken, and one third a starch you enjoy, such as rice, potatoes, or bread. The herb lentil skillet is this rule in one pan: onions, garlic, lentils, tomatoes, and a heap of spinach at the end.

A garden chop works when the oven is too much. Thinly slice cucumber, fennel, herbs, and a crisp apple. Dress it with olive oil, lemon, and salt. Put toasted seeds on top so the salad has something to chew. Serve it beside warm soup if the evening is cool.

Buy what looks alive, not what a list shames you into buying. A cabbage lasts. A bunch of herbs used tonight is better than a perfect plan you never cook. Wash and cut a few vegetables as soon as you come home, and dinner becomes assembly.
